This Winter Solstice Rose Chai Tea is a warming Ayurvedic ritual created for the darkest days of the year. I loooove the grounding spices of chai in winter, and this version adds rose petals to support the heart, digestion, and nervous system during the colder months. Especially around the Winter Solstice, when nature invites us inward to rest, reflect, and replenish. This version is a new take on an old favorite, infused with the gentle, heart-opening aroma of rose petals. It feels like a cup of comfort and devotion all in one.
Ginger is one of my favorite allies in winter, so I tend to add a generous amount. It brings warmth, circulation, and digestive fire—exactly what we need when the days are cold and heavy. If you prefer a milder chai, simply reduce the ginger. Truly, all of the spices in this recipe are forgiving and adjustable. Add more, take some away, follow your intuition—it will still turn out beautifully.
This chai can be enjoyed as part of a daily winter ritual, sipped slowly in the morning to awaken your energy or in the evening as a grounding transition into rest.
Ayurvedic Wisdom for Winter
In Ayurveda, winter is considered a Vata season—cool, dry, subtle, and often depleting. To stay balanced, we lean into qualities that are warm, moist, grounding, and nourishing. This chai was created with those exact principles in mind.
Why This Chai Works in Winter:
Fresh Ginger – Ignites agni (digestive fire), improves circulation, reduces sluggishness, and supports immunity
Cinnamon – Warming, sweet, and comforting; helps regulate blood sugar and enhance circulation
Cardamom – A digestive soother that reduces bloating and brings lightness to heavier spices
Black Pepper – Stimulates digestion and helps the body assimilate nutrients
Fennel – Calms the digestive tract and balances spice with gentle sweetness
Vanilla – Nourishing and grounding, with a subtly calming effect on the nervous system
Rose Petals – Cooling yet heart-centered; supports emotional balance, softens stress, and invites self-love and devotion
Coconut Milk (or other milk) – Adds ojas, the essence of vitality, helping counter winter dryness and fatigue
Together, these herbs create a chai that is Vata-balancing, gently supportive for Kapha (when heaviness creeps in), and adaptable for Pitta when enjoyed without excess heat or caffeine.
Optional Caffeine Note
If you enjoy a little caffeine in your chai, feel free to steep 3–6 bags of black tea after the spices have simmered for 20 minutes. Be sure not to add the tea at the beginning—it will turn bitter and overpower the delicate spice balance.
Winter Solstice Rose Chai Tea Recipe
Ingredients
1–1.5 inches fresh ginger, sliced
3 cinnamon sticks (about 2 inches each)
15 cardamom pods, lightly crushed
1 teaspoon black peppercorns
1 teaspoon fennel seeds
1 vanilla bean
1 cup loosely packed dried rose petals
8 cups water
2 cups coconut milk (or milk of choice)
Sweetener to taste (maple syrup, honey, or jaggery work beautifully)

Instructions
Combine all ingredients except milk and sweetener in a stockpot.
Halve the vanilla bean lengthwise and scrape the seeds into the pot, adding the pod as well.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Strain the chai, return to low heat, add milk, and sweeten to taste.
Sip slowly and enjoy.
Store any remaining chai in the refrigerator for up to a week. Enjoy it warm or gently reheated. It can also be enjoyed chilled, though warming is most supportive in winter.
